The best way to ensure that youll get this is to kick a lot of goals with your Full Forward. After the match, you can press to check the Man of the Match. The 3 names here are how the points will be distributed for the medal. If your Full Forward is there after each game, youll be pretty safe to get it.

You dont need to worry about your star player being suspended, as this wont void you getting the medal, unlike in the actual sport. This also applies to all other Medal specific achievements like Ron Evans Medal Ace, Morrish Medal Winner, etc.

It seems that you can only earn this and the other medals like it in Career mode.
