This achievement is missable and is earned during Mission 7, The Rucker Extraction.

Towards the end of this mission, once you have dealt with Talos Rucker, your next objective is to escape the complex and reach the extraction point. On your route to the extraction, you will pass through a market-like area with several enemies. If you look carefully, you'll notice there are tons of cucumbers laying around the market stands.

To earn this achievement, all you need to do is purposefully get yourself spotted and try to stand near a crate that has some cucumbers on it. If you're lucky, the enemy's gunfire will hit the vegetable, thus unlocking the achievement.
