NOTE - YOU MUST HAVE THE DISC FOR THIS TO WORK.
Insert Disc that you want to install.
Disconnect from XBOX Live.
Whilst offline, install your game.
Your game should install within 10-20 minutes depending on game size
When the game is fully installed, connect back to XBOX Live. (You may be prompted to do a online update but the update should finish quickly)
Enjoy
As far as I'm aware Xbox are working on a update to fix the longevity of installs but this should help in the meantime.

This actually worked for me. The online update took only about 3 minutes, then it was fine.
The game is fully playable and everything.
