For this I suggest you play as Fedor Emelianenko. He works well in this fight because he has a one hit knockout punch.

Just wait the match out until the last 15 seconds begin to count down. When it's the last 15 seconds go to your opponent and get a good punch in the head to knock him out (to punch the other guy in the head press square or triangle). Since he has a one hit knockout punch you should be fine, if however you don't knock him out then go for the TKO while he is on the floor.
