You should attempt this in Time Trial Mode because the shortcut will always be open. In other modes it will be closed by default.

After the first two flame-breathing traps, the path will split up. Take the left path and this will be the shortcut. In time trial mode you'll see it easily.

In normal race the path won't split up because the shortcut will be hidden behind a big gate. To open it, you'd have to hit the gate with a power-up such as missiles, bowling bomb, or mask. Doing it in Time Trial mode makes it much easier to see.
