There are 44 watercrafts in the game. A few are available to you at the beginning, but the rest need to be purchased and/or unlocked by advancing your watercraft rank. You can view your current rank by looking in the upper right hand corner of the main menu screen. The top rank is for Runabout watercraft and the bottom rank is for Ski watercraft. You advance your rank by winning Championships with that respective watercraft. Earning money is a bit trickier. You earn a fair amount of money by winning Championships, but only the first time you win. You will not earn enough money to purchase all of the watercrafts without some additional grinding.

A fast way to earn money is to go to Single Event > Freestyle > Tropical Islands (or any venue that interests you) and perform stunts. The more points you score, the more money you earn. When you are done, select Continue (NOT retry, as you wont keep the money that way) and repeat. A good run will earn you 4-5k in 90 seconds. In addition to the money you receive from winning Championships, you will probably need to grind out at least 200k with this method.
