Not sure there's much I'd change about that to be honest. Maybe a 5800X3D or Intel instead, but if you're wanting the latest gen AMD, then an R5 7600 is a perfectly good option.

If you're using a 1080p60Hz monitor, then I would definitely be looking at using some of the budget towards a new monitor. What you have there would be a great system for 1440p high refresh rate.
