I'd just re-use the i5-8400 you already have. Re-use your 8GB RAM as well, and maybe add another 8GB. Not sure if you can re-use your current motherboard, but if it's a standard mATX/ATX form factor, then you'll be able to re-use it.

Then spend the £1000 on this;
PCPartPicker Part List

Storage: Sabrent Rocket Q 1 TB M.2-2280 NVME Solid State Drive (£109.99 @ Amazon UK)
Video Card: MSI Radeon RX 5700 XT 8 GB MECH OC Video Card (£361.40 @ Alza)
Case: Phanteks Eclipse P400A Digital ATX Mid Tower Case (£80.45 @ Ebuyer)
Power Supply: Super Flower Leadex III Gold 650 W 80+ Gold Certified Fully Modular ATX Power Supply (£89.99 @ Currys PC World)
Monitor: AOC CQ27G2U/BK 27.0" 2560x1440 144 Hz Monitor (£299.99 @ Box Limited)
Total: £941.82

Get yourself a decent case and PSU, as well as nice big SSD.
1440p144Hz monitor and a GPU capable of running it. Just add a basic 1080p60Hz monitor as a secondary, can grab one for <100 quid easy.
