Okay I've managed to get it to 1440p by going into display and instead of using auto-detect I've set it to HDMI which gave me the option for 1440p.
But now when I go to change the refresh rate from 60hz to 120hz the screen goes all fuzzy, any reason why?

Hard reset on my console. Hold down 2 buttons on the front and then quickly press (don't hold) the power on button. Then hold the 2 buttons down for 10 seconds. You'll hear a beep. Then you can "reset with games and apps" Once the reset is finished you'll see the 1440p option.

How to enable Xbox One 120Hz:

Navigate to the Settings app on your Xbox One.
Choose the Display & sound tab.
Select the Video output tile.
Open the Refresh rate drop-down menu.
Choose 120Hz to increase your refresh rate. (Your console should now output a 120Hz signal.)

Just be sure to reset your console the way I explained above, then go to settings.

Yeah I've done that but the screen goes fuzzy, I'm not sure why

I read all the people who have the same issue, they reset there console and also bought a HDMI 2.1 It didn't work. So my guess is that you have the option between 1080p 120hz and 1440p 60hz.

1080p doesn't work at 120 either for some reason I'll just leave at 60hz, thanks anyway

After looking on the msi website, my monitor is at 100hz so I'm guessing that's why it doesn't work my bad
