Other trophies do pop but you have to do the requirements again in full such as killing 1000 enemies on horse, eat 100 times, have 30 weapons etc (I only had to buy about 7 more weapons for it to pop).
However some will pop doing one more requirement such as get a horse to level 100. The horse is already at lvl 100 so just switch to another horse at lvl 1 and once it's leveled up once to lvl 2 the trophy pops for lvl 100. There's enough money to buy all the hideouts (just fast travel near them and buy them up, takes about 10 minutes to buy 10), kill one strong animal for trophies.
