There are hundreds of ways to unlock all the achievements in this game.
If you want your achievements in a 'legit' order, i suggest you unlock as many achievements using the guide provided below, before you use these saves and spread them out over time or do them Offline (except for the Online achievements).

FIFA 08 (Achievement guide)

1. Genesis
As the Lead Profile, Create a Player. 10G

This is easy, just create a player in team management. You can just open the creator menu and save.

2. Online First
As the Lead Profile in a single player game win an Xbox LIVE ranked Match. 10G

This is easy, just go to lobbies and challenge a level one.
The best teams to be is Man Utd, Chelsea, Barcelona or Arsenal (after the February update).
You can boost this with a friend, go into a lobby and invite each other.

3. Tournament Creation
As the Lead Profile in a single player game create a tournament. 20G

Same as player creation, just Create a simple tournament.
But dont stop there, make a tournament with two teams and win it. (see 41)

11. Grass Roots
As the Lead Profile in a single player game win an Amateur game vs. the CPU. 5G

This is easy, win a match on amateur. (you can do this when doing Beat yourself (see 45) just win 3-2.)

12. Part Time Player
As the Lead Profile in a single player game win a Semi-Professional game vs. the CPU. 10G

This is easy, win a match on semi-pro.
If you have problems. (see challenges, tips and tricks at the bottom)

13. Professional Footballer
As the Lead Profile in a single player game win a Professional game vs. the CPU. 20G

This is easy, just take your time and win a match on pro.
If you have problems. (see challenges, tips and tricks at the bottom)

14. World Class Player
As the Lead Profile in a single player game win a World Class game vs. the CPU. 30G

Again just take your time and win a match on world class.
(you can do this when doing Blank Sheet (see 28), just win and do not let the opponents score.)

15. The Legend
As the Lead Profile in a single player game win a Legendary game vs. the CPU. 45G

Again just take your time and win a match on legendary.
If you have problems, select Chelsea vs Bury (Coca Cola League 2) and play with Belletti in Be a pro.

16. Defensive Hero
As the Lead Profile in a single player game win Man of the Match as a Defender on World Class. 10G

This is the first achievement with a bit of difficulty.
For being the best player in the match you should have most points(1-10) on the players rank in one game(offline on world class). To do it with a defender is the easiest achievement of the three. Just play against a half-star team, mix it up and use only one attacker. Then just pass back and fourth along your defensive line.
(easy to do with Chelsea)

17. Midfield Maestro
As the Lead Profile in a single player game win Man of the Match as a Midfielder on World Class. 10G

This is harder than the Defensive Hero, but shouldn't be any problem.
Do the same as last time but just take 3 defenders and one really deep midfielder.
Then just pass back and fourth to him. But remember to switch your defenders at the break, because they also get a lot of passes.

18. Poacher
As the Lead Profile in a single player game win Man of the Match as a Forward on World Class. 10G

Just score goals with a striker (Henry or Drogba), a hat-trick (3 goals with 1 player) should be enough to get the man of the match.

19. Real World
As the Lead Profile, Play an Online Interactive Leagues game to completion . 10G

Each round a real league play, you can pick your team and just play the game.
Not in a normal live match, but the Interactive leagues.
The match window opens two days before the real game, and closes two days later.
(rumors are this could only be got in the 2007/08 season and EA have now shutdown the servers :( WTF)

20. World Class Finisher
As the Lead Profile in a single player game score more than 5 goals on World Class. 30G

Score 5 goals in one match against a team on world class difficulty.
Just use your edited half-star team and set the match on 5 minutes in play now.

22. Single Player Hero
As the Lead Profile in a single player game achieve a 90 player rating in Be a Pro. 10G

Maybe one of the hardest achievements in the game.
Use Chelsea and be Drogba against your edited team and score goals and practice.

24. 10 scored
As the Lead Profile in a single player game get 10 or more goals in one match on Professional. 50G

Score 10 goals in one match against a team on pro difficulty.
Just use your edited half-star team and set the match on 7 minutes in play now.

27. Worldwide Legend
As the Lead Profile in a single player game win 100 Xbox LIVE ranked matches. 60G

No easy way around this one, you have to win 100 ranked matches. You could work towards this achievement while working for the 'This is too much' achievement. (You can boost this with a friend, go into a lobby and invite each other.)

28. Blank sheet
As the Lead Profile in a single player game keep a clean sheet on World Class difficulty. 30G

Do not let the opponents score.
Just use your edited half-star team against Chelsea and pass back and fourth along your defensive line.
Try not to lose the ball.
(you can do this when doing World Class Player (see 14), just win and do not let the opponents score.)

29. Host
As the Lead Profile in a single player game host 10 Xbox LIVE Matches. 10G

Create and play an quick ranked match or invite opponents in lobbies 10 times.
(You can boost this with a friend, go into a lobby and invite each other.)

30. This is too much
As the Lead Profile in a single player game host 50 Xbox LIVE Matches. 40G

For this you have to host 50 online matches. I'm not sure if it has to be ranked or unranked, but I'd advise you to host them as ranked just to be on the safe side. Also, if you host them ranked, it gives you the chance to work towards all the other online achievements. Takes patience, but it will eventually come to you. (You can boost this with a friend, go into a lobby and invite each other.)

Secret Achievements:

41. Competition Winner
As the Lead Profile Win a Created tournament. 20G

This is easy, win a created tournament. (See 3)

42. Extra bonus
As the Lead Profile in a single player game win by 2 goals in Extra Time on World Class. 20G

This is easy, select Chelsea vs your edited team-->6 minutes match--> go to extra time, choose classic extra time and win by two goals (not three or four or you'll fail).

43. Scruffysocks scores
As the Lead Profile in a single player game score a Hat Trick with a created Player. 20G

This is easy, create a player, set him on a good team and score three goals with him.
(Can do it in any game mode)

45. Beat yourself
As the Lead Profile in a single player game score two own goals in a single game. 0G

This is easy, just score 2 own goals in a match. (you can do this when doing Grass Roots (see 11) just win 3-2.)

46. They drew a blank
As the Lead Profile in a single player game keep a clean sheet in an Xbox LIVE ranked match. 20G

In a xbox live ranked match, do not let the opponent score a goal.
Use Man Utd, Chelsea, Barcelona or Arsenal and go to lobbies and challenge a level one.
You can boost this with a friend, go into a lobby and invite each other.
(you can do this when doing World Wide Hat Trick (see 47), just win 3-0.)

47. World Wide Hat Trick
As the Lead Profile in a single player game score a Hat Trick in a ranked Xbox LIVE match. 20G

Score three goals with a player in a xbox live ranked match.
Use Man Utd, Chelsea, Barcelona or Arsenal and go to lobbies and challenge a level one.
You can boost this with a friend, go into a lobby and invite each other.
(you can do this when doing They drew a blank (see 46), just win 3-0.)

48. Lightning Finisher
As the Lead Profile in a single player game score a goal in under 5 minutes. 10G

This is easy, select Chelsea vs your edited team and run straight from kick-off with Drogba.

Challenges, tips and tricks:

- Use edited teams (A), select a half-star team to use and go to team management?then formations, create a 2-4-4 formation with the 2 defenders wide on the sides. Push the rest of the players in the team as far as u can to wide positions leaving a hole through the middle of the team to run through and score.

- Use edited teams (B), go to create a player and edit the players on the half-star team you are using. Edit the oppositions players, eg. put the goalkeepers GK stats down to 1 which makes it easier to score, put the defenders tackling and speed stats down to 1 making them easier to run pass, also put the strikers speed, finishing and shot power to 1 to help keep them from scoring, adjust these depending on what the challenge requires. This method can also be used to increase the stats of the players on your team, including the players that you need to use to complete the challenges, making them faster and better players and making the challenges even easier again.

- Use edited teams (C), you can also switch (transfer) players to the team you are using to make them better, eg. Drogba to Sao Paulo (Brazil) on region 6, or to Brann (norway) on region 7.

- Always play in the same formation and know the players positions.

- The challenges can be very, very easy, if you use your mind and be smart.

Some rules of the challenges:

- Score three goals with three different players. Not aloud to do a substitute. That means that you can't switch players from the bench. But in the starting line-up you can substitute as much as you like before the game.

- Score with a GK (goalkeeper): just edit a goalkeeper with full speed, acceleration and shooting accuracy.

- Passes: do all the long and short passes back and fourth along your defensive line.
