I've invested in a shit tone of Swiss players for 1.5k , there going for about 2.3k just now and the squad builder challenge has only been out for just over an hour, should the players rise to about 3k+ or should I sell them and take the profit I can get?

get as much profit as you can now because more people will do this and it will get harder to do so
