$5k rig does not deserve a single GPU. I'd personally get a single GPU and a 1440p monitor instead, saving some $$, but if you're willing to spend it all, you may as well.
Here's your other option;

980Ti vs Fury, the 980Ti wins. However, the Fury scales better in multi-GPU set-ups. 2x980Ti's vs 2xFury's will be similar performance
