I'd be doing more gaming than rendering.

Xeon for gaming?

I'd be doing more gaming than rendering.

The CPU isn't as important as the GPU for most games, but the Xeon would be fine for gaming alongside the 980 Ti.

The only differences are that the Xeon doesn't have an iGPU (which you won't need anyway) and the Xeon has Hyperthreading which will be very useful for when you need to do rendering etc. The only other thing is that the Xeon can't be overclocked but to overclock the i7 you would need a cooler and more PSU oomph.
