Not been jail broken in a long time but I saw that iOS 8.4 has been released and TaiG have updated their tool? Could I just update through iTunes keep all my data such as photos, music, contacts, texts, games and apps without loosing any and then just jailbreak again?

Correct. Update using iTunes but do a backup before doing anything. Backup FIRST. Then I recommend restoring then restore from backup then jailbreak. Always works for me.

Thanks, I was going to do it without restoring as I think it takes too long would that delete all my data such as apps?

Restoring deletes everything. But thats what the backup is for.
You can try it without restoring but i got stuck when i tried that. After I restored, their were no problems.
It is time consuming but its worth it for the jailbreak

All you have to do is update your iOS through iTunes. All your data will stay. If your storage is almost full, it's best to clear up some space for the jailbreak and some tweaks. Happy Jailbreaking.
