So when I open up XeX menu 1.1 and go into the folder I want the game to be I then click Y and click copyDVD, then a few seconds go by and it just takes be back to the folder I was in.
Does anyone know what the problem is? Does anyone know how to fix it?

Have you tried installing them via FSD?
I had problems when it came to installing on XeX menu so tried FSD and have used it ever since.

Try installing the newest xexmenu otherwise try reinstalling xexmenu and try getting xexmenu from a different place to make sure it has all the files maybe.

Copy Disk
When the disk tray opens, Put disk in AND DO NOT COLSE IT USING THE CONTROLOR!
Push the tray close using your hand.
Wait a few seconds or until you hear the disk spinning fast.
Hit okay.
