When I went in GTA Online it said "Your profile only has access to Rockstar content" and now just keeps loading saying Joining GTA Online.

no, shut off your xbox. reset your router. turn your xbox back on and then load up gta 5 online.
rockstars servers are crap, usually its just the console has some problem where it can't connect to rockstar.
