If my world was started in 1.7.1 and updated to 1.8.1 will my world have strongholds and villages in it ?

Yes it will. I explored my whole world that I created from the very beginning and I found one small village. In the village there were three small houses, a wishing well, and I think a forge from what I could tell.

You will only find the new stuff in places that have not been generated for you yet.
Even if you map it, but it didnt generate on your screen *For whatever reason, perhaps lag*
xKiLLxZoNEx that happens all the time, its because that place did not generate on your screen before. For instance, on an old Hard world of mine I found a village with buildings cut in half as well as some that were half-underground.
