I was wondering how to get the skins, and I found out how!

EDIT: That will only work once the marketplace has updated, it has not yet.

1. Go to Xbox Dashboard.
2. Go To Games.
3. Wait until the big middle advertisement is of Tony Hawk's Pro Skater HD.
4. Click it.
5. Scroll to the bottom right and click Minecraft.
6. Click 'Get the skin pack.'

Umm, how do you know the marketplace has been updated? I attempted this and it just brought me to where I can play now or delete game :S
