Performance difference is so minimal that most of the time it is not worth it, especially for gaming since performance is almost identical.
Save the extra $100 and spend it on a part that will provide a significant boost in speed and loading times and splurge on an SSD.

I'm new to this and not a vet so don't hate
Budget & Currency: 600 + 200 ( For Mouse + Keyboard )
Peripherals & Monitor: Have a monitor of my own which isn't amazing but is HD/HDMI etc
I'd like a comfortable feeling mouse and a keyboard that matches the desktops colour scheme and performs well (Useful key shortcuts too etc)
Games: Minecraft maxed out (Nice FPS and all maxed)Most/all games at standard quality and a lot at high quality
Most modern releases like Black ops 2 etc
Software: Sony Vegas and Photoshop, nothing else really
Maybe blender but only if what you suggest can run it (Don't prioritize this at all!!!).
Aesthetics: I'd like an all black case with showing fans and green LEDs, nice gaming
look or 'futuristic' look.
Rebates/Promos: Give subtracted and un-subtracted if possible, thanks.
Details: This will be my gaming PC for a few years, i'll be constantly upgrading it so I'd like it to be completely upgradable so I won't fall behind in terms of computer development, this will also be my uni computer too.
