I know it is a bit overkill, but I do a lot of photo/video editing, LOTS of gaming (mw3, BF3, Skyrim, Diablo 2-3 (now that it's out) Starcraft, and I just like to have excess for whenever I need it

Damn that's a bit of overkill. What do you plan on doing with that PC?? Probably playing BF:3 on max settings at 60fps right? -sigh- this is me being jealous i can't afford a computer like that. I wish you the best of luck, buddy!

Why not go for dual 680's / 7907's / 670's? I hope you have a good triple monitor setup to actually put pressure on the video cards.

Cut down a gfx card imo nothing really requires 2 580s and if you want water cooling I suggest using the money saved from cutting down one gpu to make a custom cooling setup, all in all pretty cool. Mobo is sick.
