NFL 2K5.

Greatest sports game of all time.

I still like the Madden series, and thouroughly enjoyed NBA 2K11 just for the "Jordan Challenges".

MLB the Show is also a great game. I wish it was on the Xbox, it was the primary reason why I bought a PS3. Greatest baseball series ever.
