Personally a theory of mine is that Dempsey, Nikolai and perhaps Takeo are immune to the zombie virus.
And Richtofen has recently been doing tests on them but one of the side effects was memorally loss hence why dempsey has forgotten everything.
This is why Richtofens colour is green as it shows how he is actually more involved in the story. He knows more and more than seemed ever before.
