for some reason the customized icons are not showing up with the themes on my iPhone...its just showing the default icons with the wallpaper....anyone else having this problem?

I had this problem - just go to Winterboard and select "Summerboard" Mode. After Respringing your Icons should have changed according to the Theme =).
