So I am wondering with my grade I had a B in his class and then he put in two 10 point assignments in and my grade went to a B+. Now he just put in our 200 point paper and I got a 90% which is 180 points, my grade is still a B+ how?

Some schools have a weird way of averaging grades.
Can you see your grade in percentage form?

Not sure if your in college but in high school or at least in some high schools your conduct is also part of the grade and some other minor things it could be that. It also depends man because teachers usually make it were certain assignments are worth less on your overall grade. These are just somethings I can think of tbh the best thing to do is ask man a B+ honestly isn't too bad.

Edit: it also could be then end of the semester/quarter whatever your school divides it up as and maybe your grade is not for submitted into the same semester/ quarter as the B+ is in if that makes any sense

Depends on how much test grades are worth and what your test grade average already was. If it was a 92 and you got a 90, it's gonna remain the same.

Your two 10 pt quizzes might've put you just over that hump (for example you could've been 97% of the way to B+), but with the other one you're starting back at 0% if that makes sense. Just look to see how many total points are available vs how much you have.

If this is about college thats pretty common and its completely up to the prof, if you use some online site to check grading alot of the time its algorithm is different than what the prof uses
