Building a new PC but don't know too much about them.
My budget is $2000 not including a Mouse, Headphones, Keyboard

Looking for a PC that will last me a long time and will take low maintenance

What do you have that you are re-using, including peripherals(keyboard, mouse, monitor, etc)?
What will you use the system for?
Do you need an OS?
Will you overclock, or rather avoid it?
Any preferred aesthetic/colour scheme?

Reusing my old keyboard, mouse. Need a monitor. nothing bigger than 25'
I do need an OS
would like to have the ability to overclock, but wont really mess with that kind of stuff too much.
Preferred color would HAVE to be Blue or Teal

Again, you haven't told us what you'll actually be using the system for. Since I don't know what you're using it for, I'm not sure what monitor to recommend. I included an ultrawide monitor which would be nice for gaming, and editing. However, if you're using the system for competitive gaming, a 1440p 144Hz IPS monitor would be a better choice. Or, you could go 4k instead. Spend $60 for an NZXT Hue+, and you can set the LEDs to teal, or blue. I went with a white colour scheme(kind of), since blue motherboards are not so common this generation, and white is pretty neutral, so when you put the Hue+ in and set the LEDs to blue, the system will not look weird and mismatched, or miscoloured. SLI support so you can easily add a 2nd GTX 1070 at any point, if you wish to do so.
