I've been turning my PC off with the start menu but after it powers off should I turn the power supply off manually? Please help I know it sounds stupid but I don't want any tech issues down the line bc of something so simple...

You should have no problems simple turning it off from Windows. What I wouldn't do is turn it off by the wall socket or the power supply without first turning it off from Windows.

I've been turning it off with Windows but I'm saying after that it's safe to unplug it?

Yes, once it is off completely you are fine to unplug anything.

It wouldn't hurt to turn the switch at the back of the power supply to off once your PC has fully shutdown but its not very necessary and will cause no damage if left on... Unless mother nature catches you on a bad day.
