I'm trying to downgrade my software back to 8.4.1 seeing you can't jailbreak it with 8.4.2 and I'm not sure how to go about it. Also every time I try to back up my phone it says it couldn't complete it so I just gave up on that

Are you sure you're on 8.4.2? I don't think Apple has released that, and I don't that we will see that with iOS 9 right around the corner.
However, Apple stopped signing iOS 8.4 today (which is the last available jailbreak we have at the moment) so the downgrade method isn't possible anymore. So basically you're kinda stuck for the time being.
