I have my Xbox currently hooked up to my 42" HDTV which I use for watching tv, but would like to be able to use a monitor for gaming without having to disconnect everything. What will I need to be able to do this?

Nope, you'd have to disconnect everything to hook it up to another monitor. And then do it again to get it back to your tv. You can't have two screens on with xbox (or ps4)at once.

yeah you could just get an hdmi splitter aslong as they are close, and run a hdmi lead from the xbox into the splitter, then one from the splitter into the tv and another from the splitter to the monitor

Thats what I thought, and I have a splitter, but when I have it all hooked up nothing happens. No signal seems to be getting transmitted to the tv or monitor.

Like I said, you have to disconnect one and connect the other.

A HDMI Switch Box would work just fine. You can find some on Amazon for a relatively cheap price.
