I loved the DLC's on borderlands 1 and want more of the second game, are the addons any good?

Find a good deal on the GotY edition and just grab the 2nd UVHM upgrade.
You don't need the Headhunter Packs unless you want them. At this point, I'd wait to see if they are bundled together for a sale.
