Are you putting it in DFU mode when you restore it?

You're holding those buttons down for about 8 seconds, then letting go of the lock button while holding the home button for another 10 seconds right? Then your iTunes should identify it as a device that needs to be restored and it shouldn't give you any trouble.
If it keeps giving you problems, try to restore it with a different computer.

Try putting your iPhone into DFU Mode and then try restoring it again.

Also try and contact Apple Support about iTunes failing to restore your iPhone.

Once you jailbreak your device, you lose ALL help and support from apple. They're unable to assist anyone they believe to have done it.
