I have a DVD-R 8.5GB 8x disc but I am not sure if this one will work or not, I just want to verify if it will or not. Thanks!

You can use several different brands but I personally use the following:

Verbatim
DVD+R DL (Dual Layer)
8x Write Speed
8.5GB Disc Space

I heard it has to be double layered, is that true or is it optional?

your disc already is a dual layer. normal dvds have a capacity of 4.7gb. so even though it doesn't say "DL" it is a dual layer disc, so you're good.
