i looked at a couple of videos and they said they couldnt control them, and i just found out how
you wanna left shift and right click on the horse and then put a saddle in the saddle area
you can also put the armour on him from there
if you did know ignore this

You need to jump on him first and he'll throw you off and you need to jump back on and he'll keep throwing you off until you see a heart animation. When you see the heart animation press left shift to get off the horse and right click him with a saddle.
