Unless you're using programs/applications which will benefit from the extra threads (rendering, CAD, video encoding etc) then there is no need for an i7, you could save yourself some money and get yourself a 2500K/3570K. Same with the 16GB of RAM, 8GB will be suffice for gaming as you won't utilize half of it.
Don't need a 1000W PSU, get a Rosewill HIVE 650W or a 750W if you want "headroom" for SLI/CrossFireX.
I doubt you'll need the extra features which come with the PRO edition of the P8Z77-V, if you want an ASUS board go with the P8Z77-V, other suggestions would be; ASRock Z77 Extreme 4 / Gigabyte GA-Z77X-UD3H / MSI Z77A-GD65, each ranging from about $135-$170
Get a HD7970, it outperforms the GTX 680 for less.
I don't see a CPU cooler, if you want one that is great and low cost then go for the CoolerMaster Hyper 212 EVO ($35).
