I'd strongly recommend you go with an i3-2100 for your purposes. You'll notice absolutely no difference in games and otherwise. The money you saved could be put toward a better graphics card. The 560 Ti pulls just over 50 FPS average in Skyrim maxed at 1080p.

I really appreciate the reply, and the build looks good, but the only thing that I'm unsure of is if the i3-2100 is dual core, and the i5-2500 is quad how would I not notice a difference? Thanks.

You won't. For gaming, it's much better to focus on graphics horsepower.
