If this leaves s-on then this is not a full root so what is the point of doing this if you can't flash custom kernels?

you can... it is a full root, where you can flash custom ROMS and Kernel's

it unlocks the phone completely.

No it doesn't, this method of "S-OFF" leaves the NAND intact and in an S-ON state, all partitions are writable expect the boot.img partition. Comparable to having a Semi-Tethered boot on an iOS Device.

You need to downgrade with a mtd-eng.img and flash_image file and a P-IMG.zip I believe to downgrade your bootloader to one with the ability to acquire full S-OFF, with control to all partitions. This works on the HTC Supersonic (EVO 4G) as far as I know, other devices differ.

If you want to flash to another Sense ROM, then go for it, as long as you have a Sense kernel you can flash any one you want, but you need a computer and adb if you would like to switch to and AOSP ROM such as ICS/CyanogenMod/MIUI.

Couldn't have said it in any better of a way

From an XDA-Developer myself, specifically from the EVO line I can assure you that the only way to achieve full S-OFF on the EVO 3D (Shooter) is to corrupt the 1.5 bootloader and push in a completely intact, downgraded version. If you use EXT4 Recovery (which I strongly recommend) then you should have little problems, just read the AndroidForums thread thoroughly and don't screw up.
