I'm kinda new to pc gaming and I was wondering if a good keyboard even matters from a crappy one. Does it actually help improve performance?

Yes. Mechanical keyboards are known to allow you to get much better WPM while typing, and therefore APM when you're gaming. They also allow you to avoid bottoming out and make typing and gaming much easier and more comfortable.

Getting an expensive rubber-dome board defeats the purpose of spending more for a premium board. The switches will still be garbage and nothing will improve.

Mechanical boards will also last far longer (decades) and the switches will not degrade over time. The plastics used are also of much higher quality.
