The reason they buy gold from you is because gold is at an all time high, they buy it off of you and then sell it to either rich people or other gold salesman for more money than they bought it from you.

The American dollar isn't actually backed up by anything now. Before it use to be backed up by gold and for every dollar there was a equivalent amount of gold. Now the only thing backing up the American dollar is the faith in the government and the economy. It's a pretty interesting concept that if you live in America you are basically living for free and everything is free kind of like marxism or communism to a extent.

Well for most countries, not the us sadly, the nations currency is supported by gold that the government has. The us however the dollar is based on the economy and with the economy crap the dollar is worth crap.
