Should have mentioned this right from the beginning... does not change anything though. buy the 1440p now and buy another 1080p to go on the side later

Do you even plan to overclock the cpu? You could get a xeon which performs exactly the same but has a lower price tag because it does not have integrated graphics. You have a dedicated gpu so this makes no difference to you.

You could get the xeon, the 1440p and and 1080p all within your budget.

You said you need the side monitor for editing and stuff.

Game on the centre monitor, Use the side one for youtube, browsing. Basically multitasking.
