I have found a fix which worked for me, It will hopefully fix this for you people as well. I lost all of my stats/money and everything but this seemed to fix it.
Xbox 360.
1. Go to System Settings
2. Storage
3. Click where you installed GTAV to.
4. Games and Apps
5. Then find GTAV
6. Delete the 'Title Update' file.
7. Launch the game.
8. It will ask you to update the game.
9. Once you do that proceed to Online.
Then you should have your stats and other things back.
This Fix worked for me, leave in the comments if it worked for you.

Done this like 5 times now, didn't WORK..
Ahh, well, I'm gonna play Singleplayer and hope they fix it tomorrow.

This did't work for my friend either, Are you sure you just could't connect to the cloud servers?

I am now away to attempt this for an 11th time. I am trying to mix it up a little by pressing A before loading story, loading story and then loading a solo session and even sometimes - because I live on the edge - I like to go on to character selection. You know, to keep myself from reaching insanity.
