From the main menu, go to Time Trials.
Completing the main storyline will unlock a good portion of the available trials. Unlocking the rest of the levels will require you to obtain qualifying times (1 star) on the trials already unlocked.
Select the locked levels in-game to see the criteria for unlocking the level, summary below:
Playground One: Finish the Training Area chapter in the main storyline
Playground Two: Finish Playground One with 1 star
Playground Three: Finish Playground Two with 1 star
Edge: Finish the Prologue chapter in the main storyline
Arland: Finish Chapter One in the main storyline
Flight: Finish Arland with 1 star
Chase: Finish Chapter Two in the main storyline
Stormdrains One: Finish Chase with 1 star
Stormdrains Two: Finish Stormdrains One with 1 star
Stormdrains Three: Finish Stormdrains Two with 1 star
Heat: Finish Chapter Three in the main storyline
Burfield: Finish Heat with 1 star
Cranes One: Finish Burfield with 1 star
Cranes Two: Finish Chapter Four in the main storyline
New Eden: Finish Chapter Five in the main storyline
Factory: Finish Chapter Six in the main storyline
Office: Finish Chapter Seven in the main storyline
Convoy One: Finish Chapter Eight in the main storyline
