Currently using a i5-6500 but im going for a gtx 1070 or 1080 so what processor would be a good fit with those gpu's? Mostly for gaming btw.

I would wait a little bit to see if there's any better options for AM4 motherboards.

Intel prices are probably going to drop a bit considering Ryzen has just released.

My personal choice would be go for a Ryzen 7-1700X.

It all depends what your budget is.

I7 7700k if your motherboard supports the 7000 series. I7 6700k if it does not.

You mentioned that its mainly for gaming so stick to Intel. If you are going to overclock look at the i7 7700k. You will need to buy a new motherboard which allows OC though as your current one does not so it would be a waste purchasing an unlocked CPU on a locked motherboard.

Correct, your current motherboard does not allow OC so you will need a motherboard does allow it. 7700k goes well with pretty much any Z270 motherboard, allows OC.

What motherboard would you recommend? And can i just keep my ram?
Also i stll have this CoolerMaster Seidon 120v somewhere, is that good enough for cooling the processor?
