If you go on the companion app on a smartphone and click where your character used to be it says "this account has not played Destiny" previously this would give the stats about your guy

That's because that was just a beta. They reset all of your stats for every game after the beta so everyone starts off on a clean slate.

It would be bitter/sweet to me. I played the beta and loved the campaign and it's cool to be a higher level when the game starts but I think they should reset the stats do to people having more equipment in multiplayer and not making it fair for newer users to play

This might not be proof really, if they really did reset all your items, you would have lost all your items which they said would carry over, such as the iron banner and moon missing items. This is probably just a part of the process so nobody can do things with their profile until launch, everyone will probably have all their stuff at launch. If they did truly reset everyone, all "reward" items would be lost also.
