Is it possible to Play music to viewers on twitch whilst streaming on my xbox one (via snapping twitch on the console)?

At the moment, No unfortunately.

There is a possibility you will be able to with the major update that is coming on August 2nd with the option to play music in the background while playing. But not sure if it could handle playing music, having the twitch app streaming, and playing the game all at the same time.

Your only hope would probably be the August update that allows for background music. But I agree with Recon in that it might not be possible to both have background music and Twitch enabled at the same time. In theory I think that it should work, but it is possible that we are not seeing an issue that would occur if you tried it.
