ok guys so i sold this guy a virtual item and he payed and i recieved the payment and i gave him the item. now hes telling me he didnt recieve the item and he filed a dispute on paypal for a refund. i have full proof and everything saying i gave him the item and i even see the same item and his username selling the item on the steam market that i gave him. how do i dispute back and provide my proof.

and this guy bought my item for acouple hundred dollars so i dnt want this awhole getting away with my item and his money back

Well this is where you went wrong. Selling virtual items is disallowed on ebay. So even though you have proof the buyer almost always wins in most circumstances. What you should do next time is either change the shipping to local pickup only, or never sell to anyone below 20 feedback.

You Cant do anything because its not a Real item! Sorry
you should only use eBay to Show the item then all transactions are directly PayPal only not through eBay. (Family or Friends) then you can't get scammed,

What you could do is try make out it was stolen "form your steam" and you didn't authorise it... Say you have been Ratted (make a nice story up for steam support)
then report him etc.. for trade scam.. and if your lucky steam do a once only return policy for some people that get scammed. (as long as he hasn't sold it already)
