I have an old Instagram (@harveylong77)
Me and my girlfriend want to get back on it so we can go see whats on there, but Ive forgotten the email. It says it begins with H and ends in G @hotmail.com
I only have 1 email that has this and its apparently not on there servers.

Anybody know what I could do?

They have a customer service branch.

Get in contact with Instagram, they'd be your best bet.

With instagram recently deleting inactive accounts there is a high possibility that they deleted yours. I had 561 followers and when they started deleting accounts i went down to 354 followers.

I recommend you contact the support team and see what they can do for you.
