An i5 is more than enough for a gaming build. 16GB RAM is not needed. Get this instead;

I'm going to be using 3 monitors though so 16gb of ram would be good

Nope, the build I suggested will be more than enough for a triple monitor setup.

Im with Sanctorum. 3 monitors will easily run on without your 16GB ram.

DRAM has no effect whatsoever on multiple monitor setups, however VRAM does. If you wanted to game across three monitors for example you'd want a powerful card and also one with more than normal VRAM.

I would only buy an i7 if you wanted to utilize the multithreading, meaning only get an i7 if you are willing to pay extra for a slightly faster rendering time or if you are doing indepth 3D modelling etc.

I would get the i5 over the i7.
