I have been thinking of buying a slim RGH console for offline modding, system links, running FSD and leaving it on for quite long periods in a day and just general RGH functions. What do you guys think, is this the best console I could get for this sort of thing? Thanks guys

Yes, a slim RGH would be the absolute best for offline modding as RROD, is almost unheard of.

Just to let you know if you have another xbox 360 slim, you can send that to get it RGH. It would cost you less than buying a new RGH Bundle.
