For a couple of the locked achievements it say "Done, Unlocking..." When does it actually unlock? The Next day?

Been having this same problem. Unlocked a bunch of achievements on release day (Tuesday) only to find out some of them didn't actually unlock. As of today, they still say "Done! Unlocking..." 6 days later.
I contacted Xbox Support, thinking it was the preview dashboard. They walked me through some steps, but to no avail, it didn't work. They submitted a ticket for me, but I'm not sure how much that will actually do.
Only suggestion I can make is to just wait.

I have had this problem as well, and I have also done some research regarding the topic.
Apparently, many users are having this issue as well, with Halo MCC achievements not unlocking. I believe there are a few causes for this issue.
1. Probably the most important issue. YOU CANNOT PLAY CAMPAIGN WITH SKULLS. I did not realize this at first, because in order to use skulls in any other game you have to find them first, and then they just become game modifiers. If you use any non scoring skull, achievements become locked.
I do believe that this is a glitch, because I played Halo 2 on cairo station on legendary, got the skulls on the map with infinite ammo and scarab gun skulls ON. I was able to get skull and terminal achievements, but not story completion achievements, even though it says i beat it on legendary in the game.
2. 4500 achievements score, like 300 or 400 achievements. its going to be buggy. I have heard that if you unlock them, they will automatically unlock for you at some point in bulk, even though when I played cairo station without skulls at all, i got the beat it in under 15 minutes achievement, but again, not the story completion achievement.
As of now, there are no resolved issues with this case. although, something you could try, is recovering your account. Make sure that you play the game and the achievements say done.... unlocking, but when they don't, just sign out, delete account and recover. I noticed that when I switch from xbox 1 to xbox 360 every once in a while, it will load achievements that i didn't have on xbox one fully, then when im on xbox 1, they unlock.
