PCPartPicker Part List

CPU: AMD Ryzen 5 5600X 3.7 GHz 6-Core Processor (£126.99 @ AWD-IT)
Motherboard: MSI B450 Gaming Plus MAX ATX AM4 Motherboard (£79.98 @ Amazon UK)
Memory: Corsair Vengeance LPX 32 GB (2 x 16 GB) DDR4-3200 CL16 Memory (£62.99 @ Amazon UK)
Storage: ADATA XPG GAMMIX S70 Blade 2 TB M.2-2280 PCIe 4.0 X4 NVME Solid State Drive (£115.49 @ AWD-IT)
Video Card: XFX Speedster QICK 319 Core Radeon RX 7800 XT 16 GB Video Card (£459.98 @ Scan.co.uk)
Case: Fractal Design Pop Air RGB ATX Mid Tower Case (£83.99 @ Amazon UK)
Power Supply: Corsair RM650 (2023) 650 W 80+ Gold Certified Fully Modular ATX Power Supply (£74.99 @ Ebuyer)
Monitor: AOC CQ27G2S/BK 27.0" 2560 x 1440 165 Hz Curved Monitor (£198.97 @ Amazon UK)
Total: £1203.38

Leaves you £100 to play with. If you wanted to upgrade to AM5, then grab a Ryzen 5 7600, B650 motherboard, and 2x16GB DDR5(I'd aim for like 6000MHz+, CL32 or lower). That would be an additional £150 over the AM4 route though. I don't think the 7600 is that much better than the 5600 but it does potentially give you better upgrade support for the future, so it's up to you to decide whether to go AM4 or AM5.

1440p165Hz monitor instead of 1080p. Plenty of decent options for monitors around the 200 quid price point.
